Easy Summer Chicken Thigh Traybake

Ingredients

  • 4 Turnbull's Bone-in, skin-on Chicken Thighs (Piri Piri, Lemon & Green Pepper, Tikka, Garlic & Herb)
  • 500g baby potatoes, halved
  • 1 red onion, thickly sliced
  • 1 red pepper, cut into chunks
  • 1 yellow pepper, cut into chunks
  • 200g cherry tomatoes
  • 2 tbsp olive oil
  • Salt and pepper

Method

1.  Preheat oven to 200°C / 180°C fan / gas mark 6.

2.  Place the potatoes, onion, and peppers on a baking tray. Drizzle with olive oil, season with salt and pepper and toss to coat.

3.  Add the marinated chicken thighs to the tray. Bake for 40–45 minutes or until the chicken is cooked through and the vegetables are tender.

4.  Scatter over the cherry tomatoes and return to oven for 9 minutes. Serve and enjoy!
