Family Beef Wellington
Preheat your oven to 200°c/ 180°c Fan Oven / Gas Mark 5. At the same time, place a baking tray in the oven to heat up.
Remove the Beef Wellington from its packaging. Lay a piece of greaseproof paper on your work surface and place the Beef Wellington on the greaseproof paper.
Once the oven and tray are preheated, carefully remove the hot baking tray using oven gloves. Transfer the Beef Wellington with the greaseproof paper onto the hot baking tray. This helps in easy handling, prevents sticking and helps the pastry crisp at the base.
Place the tray back in the oven and bake for approximately 40-45 minutes, or until the pastry is golden brown and fully cooked. Begin checking at 40 minutes and return to the oven if it needs more time to crisp up.
Individual Beef & Venison Wellington
Preheat your oven to 200°c, 180°c Fan Oven or Gas Mark 5. At the same time, place a baking tray in the oven to heat up. Remove the Beef Wellington from its packaging. Lay a piece of greaseproof paper on your work surface and place the Beef Wellington on the greaseproof paper.

Place the tray back in the oven and bake for approximately 20-25 minutes, or until the pastry is golden brown and fully cooked. Begin checking at 20 minutes and return to the oven if it needs more time to crisp up.
Two Bird Roast
Preheat your oven to 200°c, 180°c Fan Oven or Gas Mark 5. Place your Two Bird Roast into a roasting tray. Add a little stock or water to the bottom of the tray and cover it in foil, making a few slits in the foil to allow the steam to escape.
Roast your Two Bird Roast for 90 minutes. Carefully remove the foil and return to the oven for a further 20 minutes to allow it to crisp on the outside. Check the juices run clear or a meat thermometer reads 70°-75°c. Allow to rest for 15 minutes before serving.
Ballotine of Duck
Preheat your oven to 200°c, 180°c Fan Oven or Gas Mark 5. Place your Ballotine into a roasting tray. Add a little stock or water to the bottom of the tray and cover it in foil, making a few slits in the foil to allow the steam to escape.
Roast your Ballotine for 60 minutes. Carefully remove the foil and return to the oven for a further 20 minutes to allow it to crisp on the outside. Check the juices run clear or a meat thermometer reads 70°-75°c. Allow to rest for 15 minutes before serving
